MIDWESTERN BBQ SAUCE

MIDWEST BBQ SAUCE
2 Tbs. vegetable oil
1 small yellow onion, diced
1 1/4 cups ketchup
1/2 cup cider vinegar
1/2 cup water
1/3 cup sugar
1/2 tsp. cayenne pepper
1/2 tsp. salt

In a nonaluminum saucepan over medium high heat, warm vegetable oil.  Add onion and cook, stirring until softened.  Add the ketchup, vinegar, water, sugar, cayenne, and salt and stir well.  Bring the mixture to a boil, then reduce heat to low, cover partially, and simmer until the sauce has thickened slightly, about 20 minutes.  Remove from heat and let cool.  Use immediately or transfer to air tight container and refrigerate for up to 5 days. Makes 2  1/2-3 cups.
