SOMEWHERE OVER THE RAINBOW CAKE

RAINBOW CAKE    -(from the Feminist Housewife)
2 boxes white cake mix
red, yellow, blue, green food coloring

Combine cake mix according to instructions on box.  Divide batter (I used 1 1/2 boxes of mix) evenly into six bowls.  Add coloring to batter (1. yellow, 2. red, 3. yellow & red=orange, 4. green, 5. blue, 6. red & blue=purple).  Pour first colored batter into round cake pan and follow cake baking instructions.  Remove from pan and wrap in plastic wrap.  Continue with the next color and repeat with remaining colors.  Place individually wrapped layers in freezer for easier frosting.

FROSTING
1/2 cup shortening
1/2 butter or margarine
1 1/2 tsp. clear vanilla
4 cups powdered sugar
2 Tbs. milk

Cream butter and shortening together.  Add vanilla.  Mix in powered sugar one cup at a time.  Add milk to desired consistency.  Layer cake in desired color combination with a thin layer of frosting in between layers.
